Eggs in a Tomato Puree with Goat Cheese

I had a “Sleepover in the City” with three of my best friends this weekend.  We had some amazing food while I was there, but this dish really hit home.  It was something I could easily recreate in my own kitchen on a weekend and it had some of my favorite ingredients.  This dish was from brunch this morning at the Penrose in New York City.

As I’ve become more conscious of my eating habits and my cooking, I’ve become pickier about what I chose to eat when I’m out.  I don’t want to ruin all my hard work with one meal.  And it is possible to make healthy choices when you go out!

I’m going to try to recreate this meal in an upcoming weekend.  I’ll make sure I share the recipe with you guys!
