Ribs, Mashed, Greens

This was one of the easiest dinners, ever.  I do a lot of my meat shopping at Costco because I can get high quality meat for almost half the price of what I can get in the supermarket.  We were having company on Sunday, so I picked up these ribs- there were two racks in the package and they were already spiced.  The ribs were cooked at 500 degrees in the oven for 20 minutes, then 350 for an hour and a half.  Green beans were simply boiled.  And the potatoes were chopped, boiled, then mashed with some butter, Almond Milk and goat cheese until the right consistency.  What a wonderful dinner!  And everyone was impressed!  Sometimes the simplest meals are the best!
