Cauliflower Mash with Goat Cheese

Cauliflower mashed “potatoes” has been pretty hot for the past couple of years. I was never particularly a fan, but we jazzed it up a bit and I hope you guys try this recipe. It definitely doesn’t taste like mashed potatoes to me, but it definitely has the consistency. Put all different ingredients in it to your liking!


Cauliflower Mash

Ingredients:

  • 1 head cauliflower
  • 3-4 tablespoons goat cheese
  • 1/4 cup Almond milk (or milk of your choice. Coconut milk works well.)
  • 2+ tablespoons butter
  • S&p to taste

Directions:

  • Cook your cauliflower. You really want to steam it. I know some of you will have those microwave steamers and others will choose to do it over the stove. Pick your poison. Chop up your cauliflower, then steam as desired.
  • Place cooked cauliflower in a blender or food processor (you may have to do this in batches). Add your cheese, milk, butter, s&p to taste. Blend until smooth. To get the right consistency/taste, you may need to add more butter or milk. I find this changes almost every time I make the recipe and it’s something you just have to play with. Serve and enjoy!
