You can make tzatziki and put it literally on anything. It’s great on sandwiches, on the side with veggies, or even used like a salad dressing. I used to love this sauce and make it all the time, but I kind of forgot about it. I made it again recently and fell in love all over again. I really love lemons and the freshness of squeezed lemons- pair that with the creaminess of yogurt and I’m falling head over heels.
This is a really simple recipe that will jazz up whatever you decide to make it with.
Cucumbers in Tzatziki
Ingredients:
- 2 large cucumbers, diced thinly
- 2 cups plan greek yogurt
- 1 lemon, juiced
- 2 tablespoons EVOO
- 1 tablespoon chopped, fresh dill
- 3 cloves garlic, peeled and crushed
- s&p to taste
Directions:
- In a large bowl, combine yogurt, lemon juice, EVOO, dill, garlic, s&p. Mix to combine. Add sliced cucumbers and stir together. Serve and enjoy!
