This recipe is delicious. Melt in your mouth amazingness. I would make this recipe again in 2 seconds- it’s super simple, looks relatively impressive and tastes magnificent. Pair with some asparagus, quinoa (recipe coming up for that) and you have a full dinner! Easy to prepare ahead and serve to some guests.

Sun Dried Tomato, Spinach and Cheese Stuffed Chicken
Ingredients:
- 4 chicken breasts, boneless and skinless
- 1 cup sun dried tomatoes, cut into strips
- 8 slices mozzarella cheese
- handful of spinach leaves
- 2 teaspoons olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon white wine vinegar
- 1/2 teaspoon sugar
- 2 teaspoons olive oil
- 1/2 teaspoon each of oregano, thyme, parsley, basil, and red pepper flakes

Directions:
- Preheat your oven to 350 degrees F.
- Whisk together the mustard, vinegar, sugar, 2 teaspoons olive oil, spices in a bowl.
- Cut a pocket into each chicken breast. Coat the chicken inside and out with the dressing. Stuff the chicken with tomato and spinach, then add the cheese. Seal with toothpicks.
- Heat the oil over high heat in a skillet. Add the chicken and cook for about 1 and 1/2 minutes each side just to make them golden.
- Transfer the skillet to the oven (or place seared chicken in a baking dish) and cook for about 15 minutes, or until the cheese is melted and chicken is cooked through. Let rest. Serve and enjoy!
