Sun Dried Tomato, Spinach and Cheese Stuffed Chicken

This recipe is delicious.  Melt in your mouth amazingness.  I would make this recipe again in 2 seconds- it’s super simple, looks relatively impressive and tastes magnificent.  Pair with some asparagus, quinoa (recipe coming up for that) and you have a full dinner!  Easy to prepare ahead and serve to some guests.

I based my recipe off this one.

Sun Dried Tomato, Spinach and Cheese Stuffed Chicken

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1 cup sun dried tomatoes, cut into strips
  • 8 slices mozzarella cheese
  • handful of spinach leaves
  • 2 teaspoons olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon sugar
  • 2 teaspoons olive oil
  • 1/2 teaspoon each of oregano, thyme, parsley, basil, and red pepper flakes
  • s&p

Directions:

  • Preheat your oven to 350 degrees F.
  • Whisk together the mustard, vinegar, sugar, 2 teaspoons olive oil, spices in a bowl.
  • Cut a pocket into each chicken breast.  Coat the chicken inside and out with the dressing.  Stuff the chicken with tomato and spinach, then add the cheese.  Seal with toothpicks.
  • Heat the oil over high heat in a skillet.  Add the chicken and cook for about 1 and 1/2 minutes each side just to make them golden.
  • Transfer the skillet to the oven (or place seared chicken in a baking dish) and cook for about 15 minutes, or until the cheese is melted and chicken is cooked through.  Let rest.  Serve and enjoy!
